I love this recipe. This is a revised version of Naomi Judds recipe. I have been using this recipe for over 10 years.

Ingredients

  • 2 1/3 cups coarsely crushed soda crackers (1 1/2 tubes from package)
  • 2 pounds lean ground beef
  • 1/2 pound breakfast sausage
  • 1 large egg
  • 2 medium onions
  • 3/4 cup ketchup + 1/4 for the top
  • 1/3 cup worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

How To Make meatloaf

  • Step 1
    Preheat oven to 325. In a heavy duty plastic storage bag place crackers. Seal and use a rolling pin to crush but not make them powdery. Chop onions in food processor until finely minced.
  • Step 2
    In a large bowl mix all the ingredients except the 1/4 c ketchup for the top. Mix thoroughly. Put mixture into 13 X 9 pan. Do not pack the meat too tightly. Cover with foil and bake for 45 minutes.
  • Step 3
    After 45 minutes remove foil, spread top with 1/4 c. ketchup bake uncovered for 60 minutes. Let stand for 10 minutes before slicing. This is better the next day.
