Ingredients

  • 2 pounds smoked pork neck bones
  • 3.5 pounds beef brisket, rough ground
  • 4 cups tomato sauce
  • 1 cup green bell pepper, chopped
  • 3 large onions, coarsely chopped
  • 4 - jalapenos, cored, seeded, minced
  • 2 tablespoons pepper sauce
  • 1 tablespoon salt
  • 3.5 tablespoons chili powder
  • 4 - garlic cloves, minced
  • 1.5 cups tomato paste
  • 4 tablespoons cumin, freshly ground
  • 1 tablespoon mexican oregano
  • 1/2 cup mexican oregano
  • 1 tablespoon maggi sauce
  • 1 tablespoon chocolate syrup
  • 12 ounces beer, not lite
  • 1 cup V8 juice
  • 1 cup strong coffee

How To Make maverick chili

  • Step 1
    Pick meat off of the neck bones and chop coarsely.
  • Step 2
    Place meat, onions, bell peppers, garlic into a large heavy pot and saute\' until meat is browned.
  • Step 3
    Add all liquid ingredients and 3 tablespoons of cumin alomg with all other spices.
  • Step 4
    Bring to a slow, rolling boil.
  • Step 5
    Cook at this point for 10 minutes then reduce heat to simmer, add remaining ingredients except the 1 tablespoon of cumin left, cover and cook for 1 hour.
  • Step 6
    Be sure to stir fairly often.
  • Step 7
    Add the remaining cumin and cook for 5 minutes.
  • Step 8
    Serve or refrigerate and re-heat for a better pot of chili.
