pork loin chops, 3/4" thick
1 Tbsp
oil
1 Tbsp
lime juice
1/2 tsp
chili powder
1
garlic clove, crushed
pinch
salt
pinch
pepper

SALSA INGREDIENTS

1 c
tomatoes, seeded and diced
cilantro, fresh and chopped
1 Tbsp
mint, fresh minced
1 Tbsp
onion, chopped
1/2 tsp
lime juice
1
jalapeno pepper, seeded, finely chopped

How to Make Marinated Pork Chops with Cilantro Salsa

Step-by-Step

  • 1Trim fat from pork chops; place pork in glass or plastic dish.
  • 2Mix oil, lime juice, chili powder and garlic; rub into both sides of pork, using back of spoon.
  • 3Cover and refrigerate at least 1 hour but no longer than 24 hours.
  • 4Prepare Cilantro - Mint Salsa - See recipe below.
  • 5CILANTRO - MINT SALSA: Mix all ingredients in glass or plastic bowl; cover and let stand at least 1 hour before serving.
  • 6Grill over medium coals for 20-25 minutes, or until done.
