Ingredients
- 1 pork tenderloin
- 1/2 cup pure maple syrup
- 2 cups buttermilk
- 1 bundle of thyme tied with a butchers twine
- 1 lemon, cubed
- 2 bay leaves
- salt and pepper
- 1 tablespoon olive oil
- SAUCE
- chicken stock, as needed
- 2 tablespoons butter
- 1 medium shallot, chopped
- 1 tablespoon all-purpose flour
- 1 orange, zested
- 1/2 teaspoon smoked paprika
- 2 teaspoons sherry vinegar
How To Make maple buttermilk marinated pork tenderloin

Step 1Place the maple syrup, buttermilk, thyme bundle, lemon, garlic, and bay leaves together in a large baggie.

Step 2Add the pork tenderloin and seal the bag. Place in the fridge for 24 hours.

Step 3Remove the pork from the marinade and bring it to room temperature. Discard the marinade. Season with salt and pepper.

Step 4Preheat the oven to 400 degrees F. Add the oil to a saucepan and sear the pork on all sides. Remove the pork.

Step 5Place the pork in a roasting pan. Pour 1 1/2 cups of water into the bottom of the roaster.

Step 6Roast for about 45 minutes.

Step 7Remove the roast to a carving board and let it rest.

Step 8Add chicken stock to the drippings in the pan until you have 2 cups.

Step 9Add butter to the pan and once it melts, add the shallots and cook 1 minute.

Step 10Sprinkle the flour over the shallots. Add the orange zest, paprika, and chicken stock.

Step 11Turn the heat to medium-high and whisk until reduced and thickened a bit. Add the vinegar.

Step 12Taste and adjust for salt and pepper. Serve the sauce over the pork
