Ingredients

  • 1 pork tenderloin
  • 1/2 cup pure maple syrup
  • 2 cups buttermilk
  • 1 bundle of thyme tied with a butchers twine
  • 1 lemon, cubed
  • 2 bay leaves
  • salt and pepper
  • 1 tablespoon olive oil
  • SAUCE
  • chicken stock, as needed
  • 2 tablespoons butter
  • 1 medium shallot, chopped
  • 1 tablespoon all-purpose flour
  • 1 orange, zested
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons sherry vinegar

How To Make maple buttermilk marinated pork tenderloin

  • Step 1
    Place the maple syrup, buttermilk, thyme bundle, lemon, garlic, and bay leaves together in a large baggie.
  • Step 2
    Add the pork tenderloin and seal the bag. Place in the fridge for 24 hours.
  • Step 3
    Remove the pork from the marinade and bring it to room temperature. Discard the marinade. Season with salt and pepper.
  • Step 4
    Preheat the oven to 400 degrees F. Add the oil to a saucepan and sear the pork on all sides. Remove the pork.
  • Step 5
    Place the pork in a roasting pan. Pour 1 1/2 cups of water into the bottom of the roaster.

    Roast for about 45 minutes.

    Remove the roast to a carving board and let it rest.
  • Step 8
    Add chicken stock to the drippings in the pan until you have 2 cups.
  • Step 9
    Add butter to the pan and once it melts, add the shallots and cook 1 minute.
  • Step 10
    Sprinkle the flour over the shallots. Add the orange zest, paprika, and chicken stock.
  • Step 11
    Turn the heat to medium-high and whisk until reduced and thickened a bit. Add the vinegar.
  • Step 12
    Taste and adjust for salt and pepper. Serve the sauce over the pork
