lentil soup w/ coriander

This is a very thick soup, kind of like a stew, it's great when the weather starts to get cold! I found the recipe on the back of a pkg of Dried Lentils, years ago, and put my own spin on it.

Ingredients For lentil soup w/ coriander

1 cdried lentils
-
1/3 cpearl barley
-
1 lbitalian sausage, or jimmy dean or your favorite type w/o casings
-
1 tspcoriander
-
1 1/2 tsppoultry seasoning (1&1/2 tsp)
-
1 Tbspgranulated onion
-
1 Tbspgranulated garlic
-
1/2 tspdried powdered ginger
-
1-2 tspsage
-
1 Tbsptrader joe's 21 spice blend
-
2celery, sliced
-
2carrots, sliced
-
2onions, chopped
-
1 sprigfresh rosemary, remove before serving

1-2bay leaves
-
4tomatoes, chopped
-
1/2 - 1 tspbasil, fresh
-
1/2head of cabbage, sliced thin
-
1 cspinach, fresh, sliced thin
-
4 canchicken broth
-
Spoonfulsour cream add to each bowl.
How To Make lentil soup w/ coriander

1Examine & sort LENTILS, and BARLEY. Rinse well in cold water. Set aside.

2Chop ONIONS, CELERY, GARLIC, CARROTS,

3Place Sausage in frying pan, add POULTRY SEASONING, CORIANDER, mix well, and add chopped ONIONS, CELERY, GARLIC, & CARROTS, cook until browned. POUR OFF EXCESS OIL.

4Add CHICKEN BROTH, LENTILS, BARLEY, BAY LEAVES & ROSEMARY SPRIG .. Bring to a boil. Then reduce heat & simmer about 1 & 1/2 --- 2 hours until LENTILS are tender. Taste, and adjust seasonings. Add Granulated ONION, & Granulated GARLIC & Trader Joes 21 Spice Blend.

5During last 15 minutes of cooking: REMOVE BAY LEAVES, and SPRIG of ROSEMARY Add TOMATOES, SPINACH, & CABBAGE

6Serve in bowls, top with sour cream.
