This is a very thick soup, kind of like a stew, it's great when the weather starts to get cold! I found the recipe on the back of a pkg of Dried Lentils, years ago, and put my own spin on it.

  • 1 c
    dried lentils
  • 1/3 c
    peal barley
  • 1 lb
    italian sausage, or jimmy dean or your favorite type w/o casings
  • 1 tsp
  • 1 1/2 tsp
    poultry seasoning (1&1/2 tsp)
  • 1 Tbsp
    granulated onion
  • 1 Tbsp
    granulated garlic
  • 1/2 tsp
    dried powdered ginger
  • 1-2 tsp
  • 1 Tbsp
    trader joe's 21 spice blend
  • 2
    celery, sliced
  • 2
    carrots, sliced
  • 2
    onions, chopped
  • 1 sprig(s)
    fresh rosemary, remove before serving
  • 1-2
    bay leaves
  • 4
    tomatoes, chopped
  • 1/2 - 1 tsp
    basil, fresh
  • 1/2
    head of cabbage, sliced thin
  • 1 c
    spinach, fresh, sliced thin
  • 4 can(s)
    chicken broth
  • ·
    sour cream

How to Make Lentil Soup w/ Coriander


  1. Examine & sort LENTILS, and BARLEY. Rinse well in cold water. Set aside.
  3. Place Sausage in frying pan, add POULTRY SEASONING, CORIANDER, mix well, and add chopped ONIONS, CELERY, GARLIC, & CARROTS, cook until browned. POUR OFF EXCESS OIL.
  4. Add CHICKEN BROTH, LENTILS, BARLEY, BAY LEAVES & ROSEMARY SPRIG .. Bring to a boil. Then reduce heat & simmer about 1 & 1/2 --- 2 hours until LENTILS are tender. Taste, and adjust seasonings. Add Granulated ONION, & Granulated GARLIC & Trader Joes 21 Spice Blend.
  5. During last 15 minutes of cooking: REMOVE BAY LEAVES, and SPRIG of ROSEMARY
  6. Serve in bowls, top with sour cream.
  7. I make beer bread or corn bread to serve with this
