I had made beef roast and baked beans for dinner one night. I had some leftovers and was trying to think of something to do with them. But with the recipe I am posting I am using Bush's country style baked beans. They are close in taste to my homemade, and I have never measured the ingredients when I make homemade. I may update later, after I make baked beans again.

Ingredients

  • 1/2 to 1 pounds beef or pork roast shredded
  • - barbecue sauce to cover roast (i use kc masterpiece hickory and brown sugar)
  • 1 can bush's baked beans country style
  • 1/2 - onion
  • 1/2 can jalapeno, diced
  • 1 box jiffy corn muffin mix
  • 2 tablespoons sugar
  • 1 - egg
  • 1/3 cup milk
  • 1/4 cup shredded cheddar cheese

How To Make leftovers potpie

  • Step 1
    Preheat oven to 400. Shred roast and cover with barbecue sauce. Dice onion and saute in pan with jalapenos. Pour baked beans in 9x11 baking dish, stir in onions and jalapenos. Layer barbecue on top. In mixing bowl, mix cornbread mix, sugar, milk and egg until blended, stir in cheese. Spread cornbread mix over the barbecue and bake for 20 to 25 minutes.
