karla's zucchini pie
I have made this recipes for years , it can be served as a main dish or a side.It's even better the second day when all the flavors have set in.

Ingredients
- 1/4 cup onions ; chopped
- 1/2 pound country sausage
- 4 cups chopped or shredded zuccihi
- 1/2 cup saltine cracker crumbs
- 1/2 cup parmesan cheese
- 2 - eggs ; slightly beaten
- - salt and pepper to taste
- 1/2 cup mushrooms ; optional
- 2 tablespoons parmesan cheese
How To Make karla's zucchini pie

Step 1Steam the zucchini just until tender ; DON'T over cook.

Step 2In a skillet brown sausage and onion and mushrooms.

Step 3Add the cheese , crumbs , eggs and salt and pepper. Fold in the zucchini.

Step 4Pour into a buttered pie plate ; Sprinkle with 2 Tbs. parmesan cheese.

Step 5Bake @ 350° for 45 minutes.

Step 6Let stand 10 minutes to set before serving.
