- 2 pounds thawed pork loin
- 2 cans whole cranberry sauce (14 oz each)
- 1/2 cup brown sugar, firmly packed
- 1 tablespoon corn starch, heaping tablespoon

Step 1Secure a slow cooker that holds 2 pounds of pork loin.

Step 2Open two cans of whole cranberry sauce and pour into a bowl. Add in brown sugar and corn starch. Mix well to combine.

Step 3Lay pork loins in the slow cooker and pour over the cranberry concoction.

Step 4Slow-cook the pork loin for three hours on high. After it is finished cooking, insert a thermometer, and it should read 165 or higher.

Step 5Remove pork loin from the slow cooker and let it rest on a cutting board so that it can reabsorb the juices. This should be about 15 minutes.

Step 6Place on a desired serving plate and pour some of the cranberry juice over the top.

Step 7Slice into medallions and serve individual pieces onto individual plates for serving for dinner.
