  • 2 pounds thawed pork loin
  • 2 cans whole cranberry sauce (14 oz each)
  • 1/2 cup brown sugar, firmly packed
  • 1 tablespoon corn starch, heaping tablespoon

  • Step 1
    Secure a slow cooker that holds 2 pounds of pork loin.
  • Step 2
    Open two cans of whole cranberry sauce and pour into a bowl. Add in brown sugar and corn starch. Mix well to combine.
  • Step 3
    Lay pork loins in the slow cooker and pour over the cranberry concoction.
  • Step 4
    Slow-cook the pork loin for three hours on high. After it is finished cooking, insert a thermometer, and it should read 165 or higher.

    Remove pork loin from the slow cooker and let it rest on a cutting board so that it can reabsorb the juices. This should be about 15 minutes.

    Place on a desired serving plate and pour some of the cranberry juice over the top.

    Slice into medallions and serve individual pieces onto individual plates for serving for dinner.

    Serve with red potatoes and green beans. You may wanna also serve with rice, a vegetable, or a salad.
