Ingredients
- 2 pounds pork belly
- 2 inch piece ginger cut into thick slices
- 2 cups dashi
- 2/3 cup sake
- 1/4 cup mirin
- 1/2 cup dark brown sugar
- 1/2 cup japanese soy sauce
- scallions for garnish
How To Make japanese slow cooked pork belly

Step 1Cut the pork belly into pieces. Place the pork belly in a crock pot. Mix the ginger, dashi, sake, mirin, brown sugar, and soy sauce and pour over the pork belly

Step 2Add 1 cup of water and cook 5 hours on low until pork is tender.

Step 3Remove the pork from the cooker and set aside. Strain the broth discarding the solids and put through a fat separater. Place in a saucepan and reduce by half

Step 4Serve the sauce over the pork belly garnished with the scallions.
