My husband is from Louisana and found this recipe that a Texas girl could fix. We usually have this with homemade corn bread and a salad.

Ingredients

  • 1 package eckrich polaska kielbasa sausage can substitue 3 cups cooked chicken
  • 1 medium chopped onion
  • 1 medium chopped bell pepper
  • 1 clove minced garlic or 1/2 tsp garlic salt
  • 2 cups cooked long grain rice
  • 1 can rot-tel tomatoes
  • - tobasco to taste
  • 2 tablespoons olive oil

How To Make jambalaya

  • Step 1
    Slice Sausage thinly with a sharp knife
  • Step 2
    Coat a large pan with olive oil. Saute onion, bell pepper and garlic in oil until tender.
  • Step 3
    Add sliced sausage and cook (stir often) 10 minutes low heat. Add tomatoes and cover cooking 10 - 15 minutes stirring occasionaly. Drain off grease as necessary.
  • Step 4
    In the meantime cook the rice with butter, salt and pepper.
  • Step 5
    Add rice and stir to blend and cook a few minutes more.
