My husband is from Louisana and found this recipe that a Texas girl could fix. We usually have this with homemade corn bread and a salad.

  • 1 pkg
    eckrich polaska kielbasa sausage can substitue 3 cups cooked chicken
  • 1 medium
    chopped onion
  • 1 medium
    chopped bell pepper
  • 1 clove
    minced garlic or 1/2 tsp garlic salt
  • 2 c
    cooked long grain rice
  • 1 can(s)
    rot-tel tomatoes
  • ·
    tobasco to taste
  • 2 Tbsp
    olive oil

How to Make Jambalaya


  1. Slice Sausage thinly with a sharp knife
  2. Coat a large pan with olive oil. Saute onion, bell pepper and garlic in oil until tender.
  3. Add sliced sausage and cook (stir often) 10 minutes low heat. Add tomatoes and cover cooking 10 - 15 minutes stirring occasionaly. Drain off grease as necessary.
  4. In the meantime cook the rice with butter, salt and pepper.
  5. Add rice and stir to blend and cook a few minutes more.
