Ingredients

  • 1 teaspoon olive oil
  • 2 cups fresh sliced mushrooms
  • 2 tablespoons olive oil
  • 6 - boneless pork loin chops, 3/4"-thick
  • 2 teaspoons minced garlic
  • 1 cup onion, chopped
  • 1 - 14.5 oz can diced tomatoes, undrained
  • 1-1/2 teaspoon dried italian herb blend
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 small green bell pepper, cut into strips
  • 1 small red bell pepper, cut into strips

How To Make italian-style pork chops

  • Step 1
    Heat 1 tsp oil in lg skillet over medium heat. Stir in mushrooms. Cook, stirring until tender. Transfer to a bowl.
  • Step 2
    Heat 2 tbsp oil in skillet over medium heat. Add pork chops and brown on both sides about 7-10 min each side. Place chops on plate. Drain all but 1 tbsp drippings from skillet.
  • Step 3
    Stir in garlic and onion. Cook about 5 mins, or until onion is tender. Pour in tomatoes, italian herbs, salt and pepper. Place chops back in skillet. Cover, simmer 30 mins. Uncover, top chops w/ mushrooms and bell peppers. Cook another 10 mins.
