Ingredients
- 1 teaspoon olive oil
- 2 cups fresh sliced mushrooms
- 2 tablespoons olive oil
- 6 - boneless pork loin chops, 3/4"-thick
- 2 teaspoons minced garlic
- 1 cup onion, chopped
- 1 - 14.5 oz can diced tomatoes, undrained
- 1-1/2 teaspoon dried italian herb blend
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 small green bell pepper, cut into strips
- 1 small red bell pepper, cut into strips
How To Make italian-style pork chops

Step 1Heat 1 tsp oil in lg skillet over medium heat. Stir in mushrooms. Cook, stirring until tender. Transfer to a bowl.

Step 2Heat 2 tbsp oil in skillet over medium heat. Add pork chops and brown on both sides about 7-10 min each side. Place chops on plate. Drain all but 1 tbsp drippings from skillet.

Step 3Stir in garlic and onion. Cook about 5 mins, or until onion is tender. Pour in tomatoes, italian herbs, salt and pepper. Place chops back in skillet. Cover, simmer 30 mins. Uncover, top chops w/ mushrooms and bell peppers. Cook another 10 mins.
