    olive oil
  • 2 c
    fresh sliced mushrooms
  • 2 Tbsp
    olive oil
  • 6
    boneless pork loin chops, 3/4"-thick
  • 2 tsp
    minced garlic
  • 1 c
    onion, chopped
  • 1
    14.5 oz can diced tomatoes, undrained
  • 1-1/2 tsp
    dried italian herb blend
  • 1/2 tsp
  • 1/4 tsp
  • 1 small
    green bell pepper, cut into strips
  • 1 small
    red bell pepper, cut into strips

How to Make Italian-style pork chops


  1. Heat 1 tsp oil in lg skillet over medium heat. Stir in mushrooms. Cook, stirring until tender. Transfer to a bowl.
  2. Heat 2 tbsp oil in skillet over medium heat. Add pork chops and brown on both sides about 7-10 min each side. Place chops on plate. Drain all but 1 tbsp drippings from skillet.
  3. Stir in garlic and onion. Cook about 5 mins, or until onion is tender. Pour in tomatoes, italian herbs, salt and pepper. Place chops back in skillet. Cover, simmer 30 mins. Uncover, top chops w/ mushrooms and bell peppers. Cook another 10 mins.
