italian sausage pasta with mustard vinaigrette

I usually make a french bread sandwich with the ingredients in this recipe but I decided I wanted to make it into a pasta dish. I use the 3 colored vegetable pasta but you can use any short pasta, and the mustard vinaigrette gives it really great flavor.

Ingredients

  • 2 cups short pasta, cooked and drained
  • 2 - colored bell peppers, chopped or thin slices
  • 1/2 - onion, chopped
  • 1-2 - cloves garlic
  • 1 pound ground italian sausage
  • 3 tablespoons dijon mustard
  • 3 tablespoons red wine vinegar
  • 3 tablespoons balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon dried oregano
  • - grated pecorino romano or parmesan cheese

How To Make italian sausage pasta with mustard vinaigrette

  • Step 1
    In skillet brown sausage, peppers and onions, when done grate in garlic, cook about 1 minute longer. In a bowl whisk together mustard, both vinegars, olive oil and oregano. Combine cooked pasta, sausage mixture and musard together. Pour into casserole dish and top with grated cheese.
