Italian Sausage Pasta with Mustard Vinaigrette

I usually make a french bread sandwich with the ingredients in this recipe but I decided I wanted to make it into a pasta dish. I use the 3 colored vegetable pasta but you can use any short pasta, and the mustard vinaigrette gives it really great flavor.

Ingredients

    short pasta, cooked and drained
  • 2
    colored bell peppers, chopped or thin slices
  • 1/2
    onion, chopped
  • 1-2
    cloves garlic
  • 1 lb
    ground italian sausage
  • 3 Tbsp
    dijon mustard
  • 3 Tbsp
    red wine vinegar
  • 3 Tbsp
    balsamic vinegar
  • 1/4 c
    olive oil
  • 1 Tbsp
    dried oregano
  • ·
    grated pecorino romano or parmesan cheese

How to Make Italian Sausage Pasta with Mustard Vinaigrette

Step-by-Step

  1. In skillet brown sausage, peppers and onions, when done grate in garlic, cook about 1 minute longer. In a bowl whisk together mustard, both vinegars, olive oil and oregano. Combine cooked pasta, sausage mixture and musard together. Pour into casserole dish and top with grated cheese.
