italian sausage pasta with mustard vinaigrette
I usually make a french bread sandwich with the ingredients in this recipe but I decided I wanted to make it into a pasta dish. I use the 3 colored vegetable pasta but you can use any short pasta, and the mustard vinaigrette gives it really great flavor.

Ingredients
- 2 cups short pasta, cooked and drained
- 2 - colored bell peppers, chopped or thin slices
- 1/2 - onion, chopped
- 1-2 - cloves garlic
- 1 pound ground italian sausage
- 3 tablespoons dijon mustard
- 3 tablespoons red wine vinegar
- 3 tablespoons balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon dried oregano
- - grated pecorino romano or parmesan cheese

Step 1In skillet brown sausage, peppers and onions, when done grate in garlic, cook about 1 minute longer. In a bowl whisk together mustard, both vinegars, olive oil and oregano. Combine cooked pasta, sausage mixture and musard together. Pour into casserole dish and top with grated cheese.
