italian sausage (for pizza)
There was another American couple living in Scotland, and Mrs. Harmes used to love to cook, so I liked to visit her...it reminded me of being home cooking with my family. This recipe was a fantastic treat...she made the homemade pizza for me when I was there for lunch. Since we couldn't get Italian Sausage in Scotland, she made her own... Enjoy!

Ingredients
- 1 1/2 pounds ground pork
- 2 teaspoons ground fennel
- - bay leaf, crushed
- 2 tablespoons dried parsley
- 1/2 teaspoon garlic
- 1 teaspoon salt
- - pepper
- - oregano
- 1 teaspoon dried chili peppers
- 1 tablespoon water (more if necessary)

Step 1Mix very well. Let rest in fridge about a day before freezing. Usually a third of a pound per pizza is good. Also mix with pepperoni slices, or use more sausage if that's all you use. Browned sausage should be weighed after cooking and drained. Uncooked sausage can be cooked on pizza if put on in small sized balls so that it will cook.

Step 2Sauce: 8 oz tomato sauce 1/4 t garlic powder 1/4 t thyme leaves 1/2 t oregano leaves 1/2 t worchestershire sauce Combine and mix.
