italian pulled-pork sandwiches

I actually have another slow cooker pork recipe that I love, but it's results haven't been consistent. THIS ONE, though, came out tender and juicy and tasty. And my husband made it for me, so I didn't have to do a thing! Thanks again, Pillsbury website!

Ingredients

  • 1/2 cup chopped onion
  • 2 pounds boneless pork shoulder roast or boston butt roast, trimmed of fat, cut into 2" slices
  • 4 1/2 ounces sliced mushrooms, drained
  • 1 tablespoon dried minced garlic
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon salt
  • 19 ounces tomato basil soup (progresso)
  • 2 tablespoons balsamic vinegar
  • 2 medium tomatoes, sliced
  • 12 - hamburger buns, split

How To Make italian pulled-pork sandwiches

  • Step 1
    Spray 3-1/2 - 4 quart slow cooker with cooking spray. In cooker, place onion; top with pork and remaining ingredients except tomatoes and buns.
  • Step 2
    Cover; cook on low heat setting 7 - 9 hours.
  • Step 3
    Remove pork from cooker to cutting board with slotted spoon. Shred pork with 2 forks; return to cooker and mix well. Place tomatoes on bottoms of buns. Using slotted spoon, add 1/3 cup pork over tomatoes; top with tops of buns.
