I got this recipe from my mom years ago. I can't remember where she got it from though?

Ingredients

  • 6 - pork chops, boneless
  • 2 tablespoons water
  • 1 tablespoon sunflower oil
  • 2 - medium onions sliced thin
  • 1 - red bell pepper diced
  • 1 - green bell pepper diced
  • 2 cloves fresh garlic minced
  • 4 cups sliced mushrooms
  • 2 cups chopped cooked plum tomatoes with juices
  • 1 teaspoon marjoram, dried
  • 1/2 teaspoon oregano, dried
  • 1/2 teaspoon thyme, dried
  • - salt and pepper to tastes

How To Make italian pork chops

  • Step 1
    Preheat oven to 325 degrees.
  • Step 2
    Place the pork chops in a large skillet with the water and cook over medium heat until the water evaporates and chops begin to brown
  • Step 3
    Remove chops to a large, shallow baking dish and arrange into one layer.
  • Step 4
    Heat the oil in a large skillet, when oil shimmers add the onions and peppers. Cook until the onions are translucent, then add the garlic. Stir over medium heat for 2-3 minutes.
  • Step 5
    Add the mushrooms and cook until they release their liquids and the liquids have evaporated.
  • Step 6
    In a blender combine the tomatoes with the dried spices and blend on medium until the mixture is smooth, combine with the onions mixture in skillet
  • Step 7
    Pour the tomato and onion mixture over the pork chops. Cover dish with foil and bake for 1 hour. remove the foil and bake for an additional 15 minutes
