island pork tostadas

Ingredients
- 4 - flour tortillas
- 1/4 cup hoisin sauce
- 2 ounces goat cheese, crumbled
- 8 ounces warm cooked pork, shredded (about 1 cup)
- - black beans, see recipe below
- - pineapple salsa, see recipe below
- BLACK BEANS:
- 1 tablespoon vegetable oil
- 1/2 cup red bell pepper, chopped
- 1/2 cup onion, chopped
- 1/2 teaspoon garlic, minced
- 16 ounces black beans, rinsed and drained
- 1 - jalapeno pepper, finely chopped
- 2 tablespoons chinese five-spice powder
- 1/4 teaspoon salt and pepper
- PINEAPPLE SALSA:
- 1 1/2 cups fresh pineapple, diced
- 1/2 cup red bell pepper, finely chopped
- 1/4 cup scallions, thinly sliced
- 2 tablespoons cilantro, chopped
- 1 1/2 tablespoons fresh lime juice
- 1 1/2 teaspoons vegetable oil
How To Make island pork tostadas

Step 1Preheat oven to 400ºF.

Step 2Place tortillas directly on middle oven rack and cook until warm.

Step 3Place tortillas on serving plates and brush with hoisin sauce.

Step 4Top each with 1/2 cup Black Beans, 2 tablespoons of the goat cheese, 1/4 cup of the pork and 1/2 cup of the Pineapple Salsa.

Step 5Black Beans: Heat oil in large non-stick skillet. Add bell pepper, onion and garlic and cook over medium heat for 3 to 4 minutes, stirring occasionally, until tender. Stir in the remaining ingredients and cook over low heat for 3 to 4 minutes for flavors to blend.

Step 6Pineapple Salsa: In a bowl combine all ingredients and blend well.
