How to Make Island Pork and Beans
- 1Rinse beans in running cold water and discard any stones or shriveled beans. In large kettle, over high heat, heat beans and 8 cups water to boiling.Cook 3 minutes. Remove from heat; cover; let stand 1 hour. Drain and rinse beans.
- 2In same kettle, over medium high heat, cook pork and onion until pan juices evaporate and pork is browned; stir often. Return beans to kettle.
- 3Add sugar, Worcestershire, salt, mustard, pepper and 4 cups water. Over high heat, heat to boiling. Reduce heat to low. Cover and simmer 1 1/4 hours. Add pineapple with its liquid and catsup. Over high heat, heat to boiling. Reduce heat to low. Cover and simmer 15 minutes or until beans are tender.Serves 8
