Ingredients

  • - 1 pkg. dry red kidney beans (16 oz)
  • - water
  • - 1 lb. ground pork
  • - 1 large onion, diced
  • - 2 t. brown sugar
  • - 2 t. worcestershire
  • - 2 1/2 t. salt
  • - 1 t. dry mustard
  • - 1/2 t. pepper
  • - 1 can crushed pineapple (8.25 oz)
  • - 1/2 cup catsup

How To Make island pork and beans

  • Step 1
    Rinse beans in running cold water and discard any stones or shriveled beans. In large kettle, over high heat, heat beans and 8 cups water to boiling.Cook 3 minutes. Remove from heat; cover; let stand 1 hour. Drain and rinse beans.
  • Step 2
    In same kettle, over medium high heat, cook pork and onion until pan juices evaporate and pork is browned; stir often. Return beans to kettle.
  • Step 3
    Add sugar, Worcestershire, salt, mustard, pepper and 4 cups water. Over high heat, heat to boiling. Reduce heat to low. Cover and simmer 1 1/4 hours. Add pineapple with its liquid and catsup. Over high heat, heat to boiling. Reduce heat to low. Cover and simmer 15 minutes or until beans are tender.Serves 8
