Being a Northern Ohio girl we did not raise black-eyed peas. So when we moved to Mississippi I had never heard of eating black eyed peas on New Year's Day to bring good luck, for the coming year. Well, I tried them many ways and was not a fan, until I came across this recipe in a very old Mississippi cookbook. Ah, I finally found a really good recipe and one I enjoy making and eating. I now make this every New Years Day. Hope you will try it and enjoy!

Ingredients

  • 1/2 pound bacon, cut into pieces
  • 1 medium onion,chopped
  • 1/2 large green bell pepper,chopped
  • 1 can 16-oz. black eyed peas, rinsed and drained
  • 1 can 16-oz. diced tomatoes
  • 1 can ro-tel tomatoes/chilis, hot or mild
  • 13/4 cups water
  • 1 cup white rice, uncooked
  • 2 cups cooked ham, chopped

How To Make hoppin john- (black eyed peas)

  • Step 1
    In a large skillet, partially fry bacon, add chopped onion and peppers, fry until vegetables are tender. Drain grease.
  • Step 2
    Add all the remaining ingredients. Pour into a lightly greased 2 quart baking dish. Cover. Bake in a Preheated 350 degree oven for 40- 50 minutes or until rice is tender.
  • Step 3
    Good Served with just a green salad and cornbread.
