hoppel poppel
This is an old German recipe. It uses leftover meat and, if possible, leftover diced red potatoes. I never have those, so usually have to start from scratch there. I guess I need to plan better.

Ingredients
- 1 large onion, chopped
- 1/4 cup + 1 Tbsp butter, melted
- 3 1/2 cups diced red potatoes, cooked and peeled
- 1 cup diced pork or roast beef, cooked
- 4 medium eggs, beaten
- 1 tablespoon chopped fresh parsley
- salt and pepper, to taste
How To Make hoppel poppel

Step 1Saute the onion in butter in a large skillet for 1 minute.

Step 2Add the cooked, diced potatoes and cook for 3 minutes.

Step 3Add the meat and cook for 2 minutes.

Step 4Combine the eggs, parsley, salt, and pepper beating with a wire whisk until blended.

Step 5Pour the egg mixture over the potato mixture; cook over low heat until the eggs are set, stirring occasionally.
