1Cook potatoes in a pan with a few Tbsp of oil and salt and pepper to taste. They don't have to be crispy.
Make a roux using 2T butter (melted) then whisk in 2T flour, cook for 1min stirring constantly
Add 1 1/2c milk slowly, stirring with the whisk the whole time, let cook for about 5 minutes to thicken, add 1c shredded cheese and 1/4 of onion dip (yes the soup mixed with sour cream!) Mix until cheese is melted, put everything in a baking pan sprayed with non stick spray and bake for 30 minutes.
3sprinkle shredded cheese on top and bake 5 more minutes until melted and bubbly. YUM
