Ingredients
- PORK RUB
- 3 tablespoons brown sugar
- 2 teaspoons ground ginger
- 1 teaspoon chinese 5 spice
- 1 teaspoon dry mustard
- 1 tablespoon salt
- 3 pounds pork butt or shoulder
- SAUCE
- 2 tablespoons oil
- 5 cloves garlic minced
- 1 cup chicken stock
- 1/4 cup each hoisin sauce and soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons thai sweet chili sauce
- 1 cup brown sugar
- 1 tablespoon cornstarch
- 1/2 cup water
- FOR SERVING
- large leaves from 2 heads of bibb or boston lettuc
- 1 bunch scallions chopped
- cilantro or micro greens.
How To Make hoison sticky pork lettuce wraps in instant pot

Step 1Mix the ingredients for rub together and rub it all over the pork. Add the oil to the instant pot and select saute on hi. Add the pork to the pot and brown on all sides. Remove to a plate and add the chicken stock and garlic and scrap up the bits on the bottom. Add the hoisin, soy sauce, rice vinegar, sweet chili sauce and brown sugar. Stir and saute until sugar has dissolved. Add the pork and select pressure hi and close the lid and choose 60 minutes. Turn on.

Step 2Once the cook is done use quick release and let pressure out. Carefully remove lid and remove pork to cutting board and shed.

Step 3Pour liquid through a fine mesh strainer into a sauce pan or I use a fat separater and then drain the liquid into a saucepan. Bring to a boil. Mix the cornstarch with the water then stir into the sauce to thicken it.

Step 4Place the pork back into the sauce and mix. Serve on lettuce leaves with scallions and cilantro.
