I found an old Uncle Ben's rice cookbook in a yard sale recently and this recipe just jumped off the page at me so I had to give it a try. It was wonderful and I knew that I wanted to share it with everyone here on JAP.

Ingredients

  • 1 1/2 pounds cubed pork loin
  • 3 tablespoons low-sodium soy sauce
  • 1/2 cup pineapple juice
  • 1 tablespoon vinegar
  • 3/4 teaspoon salt or to taste
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground ginger
  • 1 cup rice
  • 3/4 cup diced green pepper
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons water
  • 13 1/2 ounces canned pineapple tidbits---drained

How To Make hawaiian rice

  • Step 1
    Combine pork, soy sauce, pineapple juice, vinegar, salt, pepper, and ginger in saucepan. Cook over low heat for 1 hour or till pork is tender.
  • Step 2
    Meanwhile, cook rice according to package directions.
  • Step 3
    When pork it tender, add green pepper and cook 7 more minutes.
  • Step 4
    Dissolve cornstarch in water and add to pork mixture---stir continually until thickened. Stir in pineapple tidbits and cooked rice. Garnish with peanuts and tomato wedges.
