Ingredients
- 2 sticks lemongrass peeled and finely chopped
- 1 teaspoon garlic chili sauce
- 3 cloves garlic minced
- 4 tablespoons each sugar, fish sauce, lime juice, and rice vinegar
- 1 1/2 pounds pork tenderloin cubed
- 6 spring onions finely chopped
- 1 tablespoon dark soy sauce
- 1 large carrot shredded
- 8 ounces rice vermicelli noodles
- 1 tablespoon vegetable oil
- 2 cups cilantro chopped
- 1 cucumber shredded
- 2 tablespoons peanuts crushed
How To Make hanoi pork noodles

Step 1Mix the lemongrass, chili sauce, garlic, sugar, fish sauce, lime juice, and rice vinegar together. Stir until sugar dissolves. Place half in two bowls. Add the pork cubes, green onions, and dark soy sauce to one bowl. Add the carrots to the other bowl. Let them both bath about an hour.

Step 2Remove the pork from the marinade and add the oil to a sauce pan. Sear the pork on all sides then pour in the marinate and simmer the pork until the sauce has reduced and is sticky and glossy and sticking to the pork. About 15 minutes. In the meantime cook the noodles according to package directions and then drain.

Step 3To serve divide the cilantro between 4 bowls Add the noodles, then the carrots with the marinade, cucumbers then the pork. Then shower with the peanuts
