  • 4 large
    baking potatoes
  • 2 c
    fully cooked ham, ground
  • 1 c
    mayonnaise or miracle whip
  • 1/2 c
    swiss cheese, grated
  • 1 small
    green bell pepper, diced
  • 1 small
    jar of sliced pimientos
  • 2 Tbsp
    minced onion
  • 1/4 c
    mild cheddar cheese, grated

How to Make Ham Stuffed Baked Potatoes


  1. Scrub potatoes; bake at 425 degrees for 45-60 minutes or until done. Cut a slice from the top of each potato and scoop out the inside and cube.
  2. Toss the cubed potato with the ham and next 5 ingredients; spoon mixture back into potato shells.
  3. Bake at 425 degrees for 15-20 minutes. Sprinkle cheddar cheese on top and heat 1-2 minutes more or until cheese melts.
