Ham & Noodle Casserole

Jen B

This is a very mild, creamy tasting dish. If you want more flavor, you could add your spices or more of a flavored cheese, like cheddar. We can't eat anything spicy or on the hot side, so for this I just used colby-jack. It was perfect for us. I aslo think this would be great with a can of peas. I think it's best the day it's made, but I gave my Mom some leftovers and she loved it reheated. Hope you like it!

8 oz
egg noodles (i prefer inn maid medium)
2 c
chopped cooked ham
2 c
cheese, shredded (i like colby or colby jack)
1 can(s)
cream of chicken soup (10 3/4 oz.)
1/2 c

1 Tbsp

1 1/2 c
bread crumbs, buttered ( i use crushed butter flavored crackers/melted butter

1Gather all your ingredients together.
2Cook the noodles until almost done. (remember they will be in the oven for 30 minutes) Don't overcook them. Drain.
3While the noodles are cooking, place a teaspoon or so of EVOO in a pan and saute the onion and garlic. Preheat oven to 375*
4Combine the cheese and ham and mix together.
5In a small bowl, combine the soup and milk together. Add the garlic and onion. Mix.
6Place half the noodles in a 2 qt. buttered or sprayed casserole dish.
7Sprinkle half the ham and cheese mixture over the noodles, then half the soup/milk mixture over the ham and cheese. Then again the noodles, ham and cheese, and the soup mix. Sprinkle with cracker/bread topping if using. Cover loosely with foil and bake for 30 minutes. Enjoy!
