ham fried rice w/pineapple & fried egg

This was soooo good, you can't get this at any Chinese restaurant (not the one's I've been at anyway)!

Ingredients

  • 3 tablespoons peanut oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ginger, minced
  • 1 package chinese pea pods or frozen peas or mixed chinese vegetables, thawed
  • 6 cups white or brown rice, cooked
  • 1 teaspoon salt
  • 3 cups ham, deli style, diced (4 - 1/4" - 1/2" thick slices)
  • 2 - 20 oz. cans pineapple chunks, undrained
  • 1/4 cup soy sauce, low sodium
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon tabasco
  • 8 large eggs
  • GARNISH:
  • - scallions, chopped (both greens & whites)
  • - soy sauce, low sodium

How To Make ham fried rice w/pineapple & fried egg

  • Step 1
    In a wok or large skillet, heat the peanut oil.
  • Step 2
    Add onion, garlic & ginger. Cook until golden (about 3 minutes).
  • Step 3
    Add rice & fry until coated with the oil & slightly golden (about 2 minutes).
  • Step 4
    Add salt, ham, pineapple, peas, soy sauce, vinegar, & tabasco. Toss & cook 2-3 minutes.
  • Step 5
    In a separate skillet, crack the 4 eggs & fry at medium heat sunny side up, or to your liking.
  • Step 6
    Place fried rice onto a platter & place fried eggs on top.
  • Step 7
    Garnish with scallions & a drizzle of soy sauce.
