Ingredients

  • 1 pound linguine, uncooked
  • 1 pound fresh asparagus, cut into 1 inch spears
  • 1 pound mushrooms, sliced
  • 2 - carrot, thinly sliced
  • 1-2 - zucchini, diced
  • 2-3 cups ham, cooked and julienned
  • 1/4 cup butter + 1 tbsp olive oil
  • 2 cups half and half
  • 1 cup parmesan cheese, grated
  • 1 cup peas, frozen
  • 5-6 - green onion, sliced
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup fresh basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

How To Make ham and vegetable linguine

  • Step 1
    Cook linguine according to package directions.
  • Step 2
    Meanwhile, in a large skillet, saute asparagus, mushrooms, carrot, zucchini and ham in butter and olive oil until the vegetables are tender.
  • Step 3
    Add cream, peas, onions, Parmesan, basil, salt, pepper and nutmeg; bring to a boil.
  • Step 4
    Reduce heat; simmer for 3 minutes, stirring frequently.
  • Step 5
    Rinse and drain linguine; toss with vegetable sauce and serve. Sprinkle with extra Parmesan cheese if desired.
