    linguine, uncooked
  • 1 lb
    fresh asparagus, cut into 1 inch spears
  • 1 lb
    mushrooms, sliced
  • 2
    carrot, thinly sliced
  • 1-2
    zucchini, diced
  • 2-3 c
    ham, cooked and julienned
  • 1/4 c
    butter + 1 tbsp olive oil
  • 2 c
    half and half
  • 1 c
    parmesan cheese, grated
  • 1 c
    peas, frozen
  • 5-6
    green onion, sliced
  • 1/2 c
    parmesan cheese, grated
  • 1/4 c
    fresh basil
  • 1/2 tsp
  • 1/2 tsp
    ground black pepper

How to Make Ham and Vegetable Linguine


  1. Cook linguine according to package directions.
  2. Meanwhile, in a large skillet, saute asparagus, mushrooms, carrot, zucchini and ham in butter and olive oil until the vegetables are tender.
  3. Add cream, peas, onions, Parmesan, basil, salt, pepper and nutmeg; bring to a boil.
  4. Reduce heat; simmer for 3 minutes, stirring frequently.
  5. Rinse and drain linguine; toss with vegetable sauce and serve. Sprinkle with extra Parmesan cheese if desired.
