ham and tortellini skillet

This recipe is based loosely on a Taste of Home recipe. It's a great way to reinvent leftover ham! It's very quick and simple and uses mostly pantry ingredients.

Ingredients

  • 1 package cheese tortellini, 20 ounces or so
  • 1/2 cup bell pepper, diced
  • 1 cup broccoli florets
  • 1/2 cup peas
  • 1 1/2 cups ham, cubed
  • 2 - cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup milk or cream
  • 2 teaspoons corn starch
  • 1 tablespoon basil pesto (or dried basil)
  • 4 tablespoons grated fresh parmesan cheese
  • - salt and pepper to taste
  • 2 tablespoons butter

How To Make ham and tortellini skillet

  • Step 1
    Cook tortellini according to directions on package. Drain and set aside.
  • Step 2
    Melt butter over medium heat in a heavy skillet. Saute bell pepper and broccoli until slightly tender. Add ham and garlic, saute until heated through. (I let the ham get a little crispy, which was delicious)
  • Step 3
    Combine broth, cornstarch, and pesto and add to skillet. Bring to boil and cook until thickened.
  • Step 4
    Add milk or cream, tortellini, peas, and half of the cheese. Toss well. Salt and pepper to taste.
  • Step 5
    Sprinkle with remaining cheese and serve.
