ham and potato soup

We frequently have potluck's at my work (it's one of the perks of working at a non-profit). One of these was a "soup" potluck, and my friend Amy brought this recipe. It was so rich and buttery, it instantly caught me in it's divine clutches. I brought it home and tried it myself. My husband LOVED it, and so do I!

Ingredients

  • 6 cups water
  • 7 teaspoons chicken bouillon
  • 1/2 cup diced onion
  • 1 teaspoon pressed garlic
  • 16 ounces cream cheese
  • 2 cups diced ham
  • 24 ounces frozen cubed potatoes
  • 1 teaspoon dill

How To Make ham and potato soup

  • Step 1
    Add water and bullion to a large stock pot. Bring to a boil and add onion. Let boil for several minutes. Reduce heat to medium and add all remaining ingredients, stirring until cream cheese has dissolved. Bring to a low boil, stirring frequently. Remove from heat and serve. Makes about 12 cups.
