I AM A RECIPE HOUND, I FOUND THIS IN A MAGAZINE QUITE A LONG TIME AGO...(ONCE APON A TIME..LOL)..ANYWAY...IT LOOKED GOOD, AND IT DEFINITELY IS GOOD...AND IT'S EASY TO MAKE AS WELL...

should be small leeks (trimmed of all but 1 inch of greens well rinsed)
2 Tbsp
butter

thin slices of boiled ham

milk
1 c
whipping cream

eggs

egg yolks
salt and pepper to taste
1/2 c
grated cheese (combination of swiss and parmesan preferred)

How to Make HAM AND CHEESE WITH LEEKS (GRATIN SAVOYARD)

Step-by-Step

  • 1WITH A SHARP KNIFE, CUT SMALL CROSS INTO THE GREEN OF LEEKS...

    RINSE THOROUGHLY UNDER COLD RUNNING WATER...

    ARRANGE IN A SINGLE LAYER IN A LARGE HEAVY SKILLET.

    SPRINKLE WITH SALT AND PEPPER TO TASTE AND DOT WITH BUTTER...

    ADD WATER TO COVER..

    PLACE OVER LOW HEAT, PARTIALLY COVER AND POACH UNTIL TENDER, (APPROXIMATELY 20 - 25 MINUTES...

    DRAIN THOROUGHLY ON PAPER TOWELS...
  • 2PRE-HEAT OVEN TO 375 DEGREES

    LIGHTLY BUTTER SHALLOW BAKING DISH

    WRAP EACH LEEK IN ONE SLICE OF HAM AND ARRANGE IN A SINGLE LAYER IN PREPARED DISH...
  • 3COMBINE MILK, CREAM, EGGS, YOLKS AND SALT AND PEPPER TO TASTE IN A MEDIUM BOWL AND BLEND THOROUGHLY...

    POUR OVER THE LEEKS AND TOP WITH GRATED CHEESES...
  • 4BAKE 45 MINUTES, OR UNTIL TOP IS BROWNED AND KNIFE INSERTED NEAR CENTER COMES OUT CLEAN...
