I love to poke around estate sales, finding those wonderful treasures gathered through life and adventures. . . But, while I was at one, I came across someone's recipe collection, lovingly compiled into a special book. It made me sad to see it thrown in with all the "purchased" stuff, so I took it home to enjoy. This recipe was in there, on a handwritten card. We have a sausage quiche recipe already, but this one is, if anything, HEARTIER. And just as delicious!

  • 1/2 c
    chopped onion
  • 1/2 tsp
  • 2 c
    diced ham
  • 6
    eggs, slightly beaten
  • 1 1/2 c
  • 1 c
    shredded sharp cheddar
  • 2/3 c
    fine cracker crumbs (ritz-type)
  • 8 oz
    mushrooms, chopped
  • 1
    green pepper, chopped
  • 1 dash(es)
  • 1 dash(es)

How to Make Ham and Cheese Quiche


  1. Saute onion in butter.
  2. Spray an 8 x 8 pan with non-stick cooking spray. Combine all the ingredients in a bowl and put in the prepared pan.
  3. Bake at 350*F for 1-1/4 hours, until firm in the middle.
