I love to poke around estate sales, finding those wonderful treasures gathered through life and adventures. . . But, while I was at one, I came across someone's recipe collection, lovingly compiled into a special book. It made me sad to see it thrown in with all the "purchased" stuff, so I took it home to enjoy. This recipe was in there, on a handwritten card. We have a sausage quiche recipe already, but this one is, if anything, HEARTIER. And just as delicious!

Ingredients For ham and cheese quiche

1/2 cchopped onion

1/2 tspbutter

2 cdiced ham

6eggs, slightly beaten

1 1/2 cmilk

1 cshredded sharp cheddar

2/3 cfine cracker crumbs (ritz-type)

8 ozmushrooms, chopped

1green pepper, chopped
-
1 dashsalt
-
1 dashpepper
How To Make ham and cheese quiche

1Saute onion in butter.

2Spray an 8 x 8 pan with non-stick cooking spray. Combine all the ingredients in a bowl and put in the prepared pan.

3Bake at 350*F for 1-1/4 hours, until firm in the middle.
