ham and cheese quiche

I love to poke around estate sales, finding those wonderful treasures gathered through life and adventures. . . But, while I was at one, I came across someone's recipe collection, lovingly compiled into a special book. It made me sad to see it thrown in with all the "purchased" stuff, so I took it home to enjoy. This recipe was in there, on a handwritten card. We have a sausage quiche recipe already, but this one is, if anything, HEARTIER. And just as delicious!

Ingredients

  • 1/2 cup chopped onion
  • 1/2 teaspoon butter
  • 2 cups diced ham
  • 6 - eggs, slightly beaten
  • 1 1/2 cups milk
  • 1 cup shredded sharp cheddar
  • 2/3 cup fine cracker crumbs (ritz-type)
  • 8 ounces mushrooms, chopped
  • 1 - green pepper, chopped
  • 1 dash salt
  • 1 dash pepper

How To Make ham and cheese quiche

  • Step 1
    Saute onion in butter.
  • Step 2
    Spray an 8 x 8 pan with non-stick cooking spray. Combine all the ingredients in a bowl and put in the prepared pan.
  • Step 3
    Bake at 350*F for 1-1/4 hours, until firm in the middle.
