ham and cheese quiche

I love to poke around estate sales, finding those wonderful treasures gathered through life and adventures. . . But, while I was at one, I came across someone's recipe collection, lovingly compiled into a special book. It made me sad to see it thrown in with all the "purchased" stuff, so I took it home to enjoy. This recipe was in there, on a handwritten card. We have a sausage quiche recipe already, but this one is, if anything, HEARTIER. And just as delicious!

Ingredients
- 1/2 cup chopped onion
- 1/2 teaspoon butter
- 2 cups diced ham
- 6 - eggs, slightly beaten
- 1 1/2 cups milk
- 1 cup shredded sharp cheddar
- 2/3 cup fine cracker crumbs (ritz-type)
- 8 ounces mushrooms, chopped
- 1 - green pepper, chopped
- 1 dash salt
- 1 dash pepper
How To Make ham and cheese quiche

Step 1Saute onion in butter.

Step 2Spray an 8 x 8 pan with non-stick cooking spray. Combine all the ingredients in a bowl and put in the prepared pan.

Step 3Bake at 350*F for 1-1/4 hours, until firm in the middle.
