Ingredients
- 2 cups flour
- 1 package dry yeast
- 1 teaspoon salt
- 1 cup water
- 1/2 cup butter
- 1 - egg, beaten
- 4 ounces ham, cooked and chopped
- 8 ounces ricotta cheese
- 6 ounces mozzarella cheese, shredded
- 1/4 cup grated parmesan cheese
- 4 cups olive oil
How To Make ham and cheese calzones

Step 1For dough, stir together 1 cup flour, yeast and salt.

Step 2In a sauce pan heat water and butter just until warm (115 to 120) and butter is almost melted; stir constantly.

Step 3Add to flour mixture.

Step 4Stir vigorously until well combined.

Step 5Stir in as much of the remaining flour as you can.

Step 6Turn dough out onto lightly floured surface.

Step 7Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).

Step 8Shape into a ball.

Step 9Place in a greased bowl, turn once.

Step 10Cover and let rise in a warm place until double (30 to 45 minutes).

Step 11For filling, stir together egg, ham, ricotta, mozzarella and parmesan cheeses.

Step 12Set aside.

Step 13Punch dough down.

Step 14Cover and let rest for 10 minutes.

Step 15Divide dough into 8 portions and roll out each into a 7\" circle.

Step 16Spoon about 2 rounded tablespoons filling onto half of each circle of dough.

Step 17Fold dough over filling, fold under edges, and pinch to seal.

Step 18Fry calzones, a few at a time, in hot oil for 3 to 4 minutes or until golden brown.

Step 19Drain on paper towels.
