Ingredients For ham and cheese calzones

2 cflour

1/4 cgrated parmesan cheese

6 ozmozzarella cheese, shredded

8 ozricotta cheese
-
4 ozham, cooked and chopped

1egg, beaten
-
1/2 cbutter
-
1 cwater
-
1 tspsalt
-
1 pkgdry yeast
-
4 colive oil
How To Make ham and cheese calzones

1For dough, stir together 1 cup flour, yeast and salt.

2In a sauce pan heat water and butter just until warm (115 to 120) and butter is almost melted; stir constantly.

3Add to flour mixture.

4Stir vigorously until well combined.

5Stir in as much of the remaining flour as you can.

6Turn dough out onto lightly floured surface.

7Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).

8Shape into a ball.

9Place in a greased bowl, turn once.

10Cover and let rise in a warm place until double (30 to 45 minutes).

11For filling, stir together egg, ham, ricotta, mozzarella and parmesan cheeses.

12Set aside.

13Punch dough down.

14Cover and let rest for 10 minutes.

15Divide dough into 8 portions and roll out each into a 7\" circle.

16Spoon about 2 rounded tablespoons filling onto half of each circle of dough.

17Fold dough over filling, fold under edges, and pinch to seal.

18Fry calzones, a few at a time, in hot oil for 3 to 4 minutes or until golden brown.

19Drain on paper towels.
