Ingredients
- 2 cups water
- 2 cups dark beer
- 1/4 cup coarse salt
- 4-6 - center cut pork chops, about 1-inch (3 cm) thick
- 6-8 - cloves garlic, finely chopped
- 2 teaspoons dried sage
- - salt and freshly ground pepper to taste
How To Make grilled beer-brined pork chops

Step 1Combine the water, beer, and salt in a bowl and stir to dissolve the salt. Place the pork chops in a resealable plastic bag and add the brine mixture. Refrigerate for 4 hours, turning the bag occasionally.

Step 2Remove the pork chops from the brine (discard the brine) and pat dry with paper towels. Mix the garlic, sage, salt, and pepper in a small bowl and rub the mixture on both sides of the pork chops.

Step 3Cook over hot coals or in a skillet over moderate heat until they reach 145F (63C) on an instant read thermometer. Remove from the heat and let stand for 5 minutes before serving.
