Ingredients

  • 2 cups water
  • 2 cups dark beer
  • 1/4 cup coarse salt
  • 4-6 - center cut pork chops, about 1-inch (3 cm) thick
  • 6-8 - cloves garlic, finely chopped
  • 2 teaspoons dried sage
  • - salt and freshly ground pepper to taste

How To Make grilled beer-brined pork chops

  • Step 1
Combine the water, beer, and salt in a bowl and stir to dissolve the salt. Place the pork chops in a resealable plastic bag and add the brine mixture. Refrigerate for 4 hours, turning the bag occasionally.
  • Step 2
Remove the pork chops from the brine (discard the brine) and pat dry with paper towels. Mix the garlic, sage, salt, and pepper in a small bowl and rub the mixture on both sides of the pork chops.
  • Step 3
Cook over hot coals or in a skillet over moderate heat until they reach 145F (63C) on an instant read thermometer. Remove from the heat and let stand for 5 minutes before serving.
