My great greek Yia Yia - - Her recipes are loose guidelines at best. There were many pinches, dashes and splashes. This is her Bourekia. Enjoy!

Ingredients
- 1/2 pound ground beef
- 1/2 pound ground pork
- 1 package phyllo dough
- 1/2 can tomato paste, no salt added
- 1/2 cup grated cheese (i prefer mozzarella, feta or parmesan)
- - salt, onion salt, garlic salt, pepper (to taste)
- 1 - egg
- 1 stick butter, melted (for brushing on dough)
How To Make great yia yia manutes' bourekia

Step 1Brown beef & pork in a skillet or frying pan using a small amount of oil.

Step 2Add 1/2 tin of tomato paste

Step 3Add 1/2 cup grated (or crumbled if you're using feta) cheese

Step 4Add salt, pepper, onion & garlic salt to taste (This is where the dashes and the pinches come in.)

Step 5Beat one egg and add to meat mixture when it has cooked and cooled.

Step 6cut phyllo dough length wise to create two long pieces.

Step 7brush dough strips with butter

Step 8add meat mixture and roll into cigar shaped rolls. (It is sometimes easier to place phyllo strips on wax paper or parchment paper since they are so thin and tear easily.)

Step 9Bake until golden brown.(roughly 30 minutes)
