swedish meatballs

My family loves when I make these meatballs. We like Mashed potatoes with our Swedish Meatballs, rather then noodles, but sure noodles would be good also. I never measure anything it's always been a little of this and a little of that. I hope everyone enjoys these as much as we do!

Ingredients

  • CARMELIZED ONIONS
  • 6 tablespoons butter
  • 2 large yellow onions
  • pinch salt & pepper
  • MEAT MIXTURE
  • 2 pounds ground beef
  • 1 pound ground pork
  • 1 - egg
  • 1/2 medium yellow onions
  • BREADCRUMB MIXTURE
  • 1 1/2 cups plain dried bread crumbs
  • 1/4 teaspoon nutmeg or allspice
  • 1/8 teaspoon ground black pepper
  • 1 1/2 teaspoons onion powder
  • 1 package lipton onion soup mix
  • 3 tablespoons heavy whipping cream
  • 2 tablespoons parsley flakes
  • 5 dashes worcestershire sauce,
  • 2 - eggs
  • SAUTEED MUSHROOMS
  • 12 large fresh sliced mushrooms
  • GRAVY
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 3 - bullion cubes
  • 2 cups water
  • 2 cups milk
  • 1 pinch nutmeg or all spice

How To Make swedish meatballs

  • Step 1
    Preheat oven to 350.
  • Step 2
    For caramelized onions slice onion into 1/2 inch slices and put in skillet on med-low heat for about 30 mins.
  • Step 3
    mix ground beef and pork together. Add chopped Onion and mix well, add one 1 egg.
  • Step 4
    In another bowl mix bread crumbs, nutmeg, pepper, onion powder, parsley flakes,and Lipton onion soup mix, mix well throughout the breadcrumbs. Then add whipping cream, worcestershire sauce, and 2 eggs, mix well.
  • Step 5
    Add the bread crumb mix to the meat and mix well. Roll into 2 inch balls, and put on in a large frying pan.
  • Step 6
    Once the meatballs are getting a nice brown on the outside take off the stove and place in bowl. The onions should now also be done. Take off stove and spoon out and add to meatballs. Add the sliced mushrooms to the same butter that was used for onions. Cook up mushrooms for about 10-15 mins, until tender.
  • Step 7
    While the mushrooms are cooking start making the gravy. Cook on medium heat. Add bullion cubes or beef granules and let the heat reduce, add butter, and melt down, add flour 1 tablespoon at a time while adding flour stir constantly until thick. slowly add milk and water (I like to mix the milk and water together, just makes it easier). Add pinch of nutmeg and stir until thickened.
  • Step 8
    Once gravy thickens add mushrooms,meatballs and onions to a roaster and put in oven for 30 mins.
