glazed pork roast stuffed with apples & onions

Another "husband-made" recipe. I came home from work and the house smelled amazing!

Ingredients

  • 2 pounds pork loin roast
  • 2 - apples, granny smith, sliced into thin wedges
  • 1 - onion, red, sliced into thin wedges
  • 2 tablespoons olive oil, extra virgin
  • RUB
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon dill seed
  • 1/2 teaspoon lemon pepper
  • 1/4 teaspoon dill, dried
  • GLAZE
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey

How To Make glazed pork roast stuffed with apples & onions

  • Step 1
    Preheat oven to 350
  • Step 2
    Mix together glaze ingredients. Set aside.
  • Step 3
    Mix together rub ingredients and rub onto roast
  • Step 4
    In a cast iron skillet, heat the olive oil & brown roast on all sides
  • Step 5
    Slice pork roast lengthwise to within 1/4"-1/2" of edge for stuffing.
  • Step 6
    Open the slit in the roast and stuff with as many apple & onion wedges as will fit. Tie roast closed with string.
  • Step 7
    Arrange remaining apple & onion wedges around the roast in the roasting pan.
  • Step 8
    Coat & drizzle roast with the glaze. Roast at 350 for 45-60 mins, or until done.
