    pork loin roast
  • 2
    apples, granny smith, sliced into thin wedges
  • 1
    onion, red, sliced into thin wedges
  • 2 Tbsp
    olive oil, extra virgin
  • RUB

  • 1/2 tsp
    garlic powder
  • 1/8 tsp
    cayenne pepper
  • 1/2 tsp
    dill seed
  • 1/2 tsp
    lemon pepper
  • 1/4 tsp
    dill, dried

  • 1 Tbsp
    balsamic vinegar
  • 1 Tbsp

How to Make Glazed Pork Roast Stuffed with Apples & Onions


  1. Preheat oven to 350
  2. Mix together glaze ingredients. Set aside.
  3. Mix together rub ingredients and rub onto roast
  4. In a cast iron skillet, heat the olive oil & brown roast on all sides
  5. Slice pork roast lengthwise to within 1/4"-1/2" of edge for stuffing.
  6. Open the slit in the roast and stuff with as many apple & onion wedges as will fit. Tie roast closed with string.
  7. Arrange remaining apple & onion wedges around the roast in the roasting pan.
  8. Coat & drizzle roast with the glaze. Roast at 350 for 45-60 mins, or until done.
