Ingredients
- 2 pounds pork loin roast
- 2 - apples, granny smith, sliced into thin wedges
- 1 - onion, red, sliced into thin wedges
- 2 tablespoons olive oil, extra virgin
- RUB
- 1/2 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon dill seed
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon dill, dried
- GLAZE
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
How To Make glazed pork roast stuffed with apples & onions

Step 1Preheat oven to 350

Step 2Mix together glaze ingredients. Set aside.

Step 3Mix together rub ingredients and rub onto roast

Step 4In a cast iron skillet, heat the olive oil & brown roast on all sides

Step 5Slice pork roast lengthwise to within 1/4"-1/2" of edge for stuffing.

Step 6Open the slit in the roast and stuff with as many apple & onion wedges as will fit. Tie roast closed with string.

Step 7Arrange remaining apple & onion wedges around the roast in the roasting pan.

Step 8Coat & drizzle roast with the glaze. Roast at 350 for 45-60 mins, or until done.
