Ingredients

  • 1 1/2 lb
    lean pork roast
  • 1 1/2 lb
    firm pears, peeled, cored and halved
  • 1 1/2 lb
    potatoes, peeled and sliced
  • 2 c
    low sodium chicken stock
  • 1 tsp
    caraway seeds
  • 2 Tbsp
    light oil
  • ·
    salt, to taste
  • ·
    black pepper freshly ground

How to Make German Pork And Pear Casserole

Step-by-Step

  1. rub salt all over the joint of pork.
  2. heat the oil in a heavy casserole dish. brown the meat on all sides.
  3. arrange the pears around the roast in the casserole dish and then arrange the potatoes on top of the pears. sprinkle the caraway seeds over, season with salt and pepper and pour over the chicken stock.
  4. bring to a boil, then reduce the heat and simmer for at least 1-1/2 hours. remove the meat, pears and potatoes and reduce the sauce until slightly thickened.
