garlic roasted pork chops

This recipe was given to me by a co-worker many years ago. My family quite enjoys it.

Ingredients

  • 1 teaspoon fines herbes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 - (4 oz. each) boneless pork loin chops
  • 10 - red potatoes, small
  • 12 ounces baby carrots (3 c.)
  • 2 medium onions, cut in wedges
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

How To Make garlic roasted pork chops

  • Step 1
    Heat oven to 450°F. Spray 15x10x1" pan with non-stick spray.
  • Step 2
    In small bowl, combine spices; mix well. Sprinkle half of spice mix over pork chops.
  • Step 3
    In large bowl, combine vegetables; sprinkle with oil and remaining spice mixture. Toss to coat evenly. Place vegetable mixture in center of pan and bake for 10 minutes.
  • Step 4
    Place pork chops around vegetables in pan. Bake 20-30 minutes until pork is no longer pink and vegetables are tender, stirring vegetables half way through cooking time.
