1/2 tspgarlic powder - i'd prefer chrushed garlic
1 lbpork tenderloin
1 Tbspolive oil
6new potatoes - quartered
1 tspdried oregano
1/2 tspsalt (or to your taste)
1/2 tspblack pepper (or to your taste)
·13" x 9" baking pan
How to Make Garlic Pork with Roasted Red Potatoes
- Preheat oven to 425F.
Combine paprika & garlic in a small bowl;
Sprinkle over pork;
Brown pork in large skillet over medium heat, about 3 minutes per side, until evenly browned;
- Transfer pork roast to baking pan;
Add oil, potatoes & oregano to skillet, toss to coat.
Arrange potatoes around pork.
Sprinkle with salt & pepper;
Bake 22 minutes or until barely pink in the center.
- Transfer pork to carving board;
Tent with foil & let stand 5 minutes.
Stir potatoes & let stand 5 minutes.
Slice pork & serve with potatoes.
