  • 4 slice
    ham steaks, 1 inch thick
  • 1/4 c
    minced white onion
  • 4 Tbsp
    dark brown sugar, packed
  • 4 Tbsp
    irish whiskey
  • 2 Tbsp
  • 2 Tbsp
  • 3/4 c
    ham stock (better than bouillon)
  • ·
    pepper to taste

How to Make Gammon Steaks with Whiskey Sauce


  1. Heat grill.
  2. In a medium sauce pan melt butter.
  3. Brush ham steaks with butter-reserve the rest.
  4. Saute onions in remainder of butter until cooked.
  5. Remove from heat and whisk in flour gradually.
  6. Slowly whisk in stock, return to heat.
  7. Add sugar and bring to the boil.
  8. Reduce heat and simmer for 3 minutes.
  9. Add Whiskey and season with pepper.
  10. If sauce is to thick, add a little bit more whiskey from your glass. Stop whining and just do it.
  11. Take your glass and ham steaks to the grill.
  12. Grill steaks for 3-4 minutes per side-you want nice golden grill marks, not grilled steak black grill marks.
  13. Plate and serve with sauce.
