Ingredients

  • CILANTRO VINAIGRETTE
  • 1 cup cilantro
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon chili crisp
  • olive oil
  • salt
  • PORK RAGU
  • 2 tablespoons peanuts ground
  • 1 medium shallot, chopped
  • 1 teaspoon olive oil
  • 2 cloves garlic
  • 6 ounces ground pork
  • 1 tablespoon sugar
  • 1/2 tablespoon white miso
  • 1 teaspoon tamarind paste
  • 1 teaspoon chili crisp
  • 1/2 tablespoon lime juice
  • salt
  • BASS
  • 2 large bass filets, fresh catch if possible
  • 1 tablespoon olive oil
  • salt and pepper

How To Make fresh water bass with peanut pork ragu

  • Step 1
    For the vinaigrette, combine all ingredients together except the oil in a food processor. Then, process, drizzling in the olive oil to make the vinaigrette. Set aside.
  • Step 2
    Grind the peanuts in a spice grinder. Set aside.
  • Step 3
    Place the oil in a skillet. Add the shallots and garlic, and cook for 2 minutes. Add the pork and cook until no longer pink.
  • Step 4
    Add the remaining ingredients and combine well. Stir in the peanuts. Set aside, keep warm.
  • Step 5
    Season the bass with salt and pepper. Add oil to the skillet and sear the fish on each side about 2 minutes per side, depending on how thick they are.
  • Step 6
    Plate the pork ragu on the plate. Top with the bass and then drizzle the vinaigrette over.
