Ingredients
- CILANTRO VINAIGRETTE
- 1 cup cilantro
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon chili crisp
- olive oil
- salt
- PORK RAGU
- 2 tablespoons peanuts ground
- 1 medium shallot, chopped
- 1 teaspoon olive oil
- 2 cloves garlic
- 6 ounces ground pork
- 1 tablespoon sugar
- 1/2 tablespoon white miso
- 1 teaspoon tamarind paste
- 1 teaspoon chili crisp
- 1/2 tablespoon lime juice
- salt
- BASS
- 2 large bass filets, fresh catch if possible
- 1 tablespoon olive oil
- salt and pepper
How To Make fresh water bass with peanut pork ragu

Step 1For the vinaigrette, combine all ingredients together except the oil in a food processor. Then, process, drizzling in the olive oil to make the vinaigrette. Set aside.

Step 2Grind the peanuts in a spice grinder. Set aside.

Step 3Place the oil in a skillet. Add the shallots and garlic, and cook for 2 minutes. Add the pork and cook until no longer pink.

Step 4Add the remaining ingredients and combine well. Stir in the peanuts. Set aside, keep warm.

Step 5Season the bass with salt and pepper. Add oil to the skillet and sear the fish on each side about 2 minutes per side, depending on how thick they are.

Step 6Plate the pork ragu on the plate. Top with the bass and then drizzle the vinaigrette over.
