fresh homemade bratwurst sausage
I like brats grilled, so I guess you know how I do them. Have fun making them. I usually make around 500 lbs a year. Not just Brats... I make many sausages.

Ingredients
- 3 pounds pork butt
- 1 tablespoon kosher salt
- 2 teaspoons ground white pepper
- 1 teaspoon marjoram, dried (heaping)
- 1/2 teaspoon caraway seeds
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 teaspoon ginger
- 1 tablespoon minced garlic (optioal)
- 2 teaspoons red pepper flakes (optional)
- 1 small 5 foot piece of natural hog casing
How To Make fresh homemade bratwurst sausage

Step 1Mix all the spices together in a bowl.

Step 2cut all the pork butt into pieces big enough for your grinder to handle. Spread the spices from the bowl on the pork chunks and mix well by hand.

Step 3Grind meat chunks with medium plate. (IMPORTANT) take a little piece of sausage and fry it to see if spices are enough, if not add and mix again.

Step 4My wife like brat patties. I like brat links. So i stuff half into hog casings, and the other half into bulk. I suck the air out of the packages, and freeze them.
