I like brats grilled, so I guess you know how I do them. Have fun making them. I usually make around 500 lbs a year. Not just Brats... I make many sausages.

Ingredients

  • 3 pounds pork butt
  • 1 tablespoon kosher salt
  • 2 teaspoons ground white pepper
  • 1 teaspoon marjoram, dried (heaping)
  • 1/2 teaspoon caraway seeds
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 teaspoon ginger
  • 1 tablespoon minced garlic (optioal)
  • 2 teaspoons red pepper flakes (optional)
  • 1 small 5 foot piece of natural hog casing

How To Make fresh homemade bratwurst sausage

  • Step 1
    Mix all the spices together in a bowl.
  • Step 2
    cut all the pork butt into pieces big enough for your grinder to handle. Spread the spices from the bowl on the pork chunks and mix well by hand.
  • Step 3
    Grind meat chunks with medium plate. (IMPORTANT) take a little piece of sausage and fry it to see if spices are enough, if not add and mix again.
  • Step 4
    My wife like brat patties. I like brat links. So i stuff half into hog casings, and the other half into bulk. I suck the air out of the packages, and freeze them.
