fettuccine with sausage and vegetables

I'm a big fan of dishes I can serve up with "everything" in them! Less serving dishes on the table. LOL. This sounds more involved than it is. Like a stir fry, if you prep ahead of time you can do lots of the cooking while the pasta is cooking.

Ingredients

  • 8 ounces package dry fettuccine
  • 1 pound italian sausage, cut into 1/2 inch pieces
  • 3/4 cup green onions, sliced
  • 2 cloves garlic, minced
  • 3 tablespoons butter, melted
  • 2 tablespoons vegetable oil
  • 3 cups zucchini, sliced
  • 2 cups broccoli florets
  • 2 cups fresh mushrooms, sliced
  • 2 medium tomatoes, cut into wedges
  • 1/2 cup fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon dried whole basil (leaves, not ground)
  • 1 teaspoon dried whole oregano (leaves not ground)
  • 1/4 teaspoon ground black pepper
  • 1 dash ground red pepper
  • 3/4 cup mozzarella cheese, shredded
  • 1/2 cup romano cheese, grated

How To Make fettuccine with sausage and vegetables

  • Step 1
    Cook the fettuccine according to package directions; drain well. Set the fettuccine aside.
  • Step 2
    Cook the sausage in a large skillet over medium heat until browned on all sides; drain well, discarding the drippings. Set the sausage aside.
  • Step 3
    Saute the green onions and garlic in butter and oil in a large skillet over medium heat for 3 minutes. Add the zucchini, broccoli, and mushrooms, and saute 3 to 5 minutes. Add the reserved sausage, tomato, and the next 6 ingredients; cook 3 minutes.
  • Step 4
    Combine the cooked fettuccine and vegetable mixture; toss gently. Sprinkle with mozzarella and Romano cheese; toss well. Serve immediately.
