federal meat market's baked stuffed pork chops

Growing up we would buy these great pork chops already stuffed at the local meat market. A cousin worked there and gave me the recipe for the stuffing that they used.

Ingredients

  • 4 - pork chops, double-thick
  • 1 1/2 cups dry bread crumbs
  • 1 teaspoon sugar
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt
  • 8 tablespoons butter, unsalted, divided
  • 1 small onion, finely diced
  • 2 - celery stalks, finely diced
  • 1 teaspoon poultry seasoning
  • 2 tablespoons parsley flakes
  • 1 cup beef broth

How To Make federal meat market's baked stuffed pork chops

  • Step 1
    Make slits in pork chops to form a pocket in fat end; set aside. Combine bread crumbs, sugar, pepper, salt, poultry seasoning and parsley and set aside.
  • Step 2
    Melt 5 tablespoons of the butter in a skillet and add onions and celery; saute until celery is tender. Add to bread crumb mixture and mix well. Stuff chops generously and skewer shut with toothpicks.
  • Step 3
    Heat the remaining 3 tablespoons of butter in a skillet. Brown chops slowly over medium heat for 5 minutes on each side. Add beef broth and simmer over low heat for 30 minutes until tender, turning chops at least once. Remove toothpicks and pour pan juices over pork chops before serving.
