Ingredients

  • 4 - loin pork chops, lean
  • - chopped garlic
  • - salt and pepper to taste
  • 4 - potatoes, peeled and sliced
  • 2 large onions, sliced
  • 1/2 teaspoon dry mustard
  • 1.5 cups sour cream
  • - flour for dredging

How To Make farmer's pork chops

  • Step 1
    Coat chops with flour.
  • Step 2
    Brown with garlic in 2 tablespoons oil.
  • Step 3
    Season with salt and pepper.
  • Step 4
    Place potatoes in the bottom of baking dish large enough to hold chops without crowding.
  • Step 5
    Place chops on top.
  • Step 6
    Separate onion slices into rings; place over chops.
  • Step 7
    Combine sour cream and dry mustard, pour over all.
  • Step 8
    Cover pan with foil and bake at 350 for 1 1/2 hours.
  • Step 9
    Remove foil from pan and bake a little longer until top is nicely browned.
