This is a recipe that I have had for several years; it seems like it has been wiped off the internet, so I wanted to share it with you all. My hubby never cared for black-eyed peas until I started making this recipe for New Year's Day; now he looks forward to it on January 1st! I have modified the original recipe to the Insta Pot to speed up the cooking time. You can make it your own by adding fresh or frozen collard greens to the Hoppin' John if you so desire. Pair it with my recipe for Buttermilk Cornbread and you have a fantastic meal to ring in the New Year.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 1/2 cup celery stalks, chopped
  • 1/2 cup green peppers, chopped
  • 1 tablespoon garlic, chopped
  • 1 quart chicken stock
  • 2 large ham hock, smoked
  • 1 pound black-eyed peas, dried
  • 1 bay leaf
  • 1/2 teaspoon thyme, dried
  • 1 cup ham, cubed
  • salt and pepper
  • cayenne pepper
  • parsley, Italian fresh or dried
  • hot pepper sauce
  • 3 tablespoons green onion, finely chopped
  • 3 cups rice, cooked and hot

How To Make emeril's lost hoppin' john recipe

  • Black eyed peas soaking overnight.
    Step 1
    Rinse, sort, then cover the peas in fresh water. Soak the peas overnight the night before you plan to cook them.
  • Green pepper, onion and garlic sauteeing.
    Step 2
    Add the olive oil to the Insta Pot and set it to "sauté." Add the onion, celery, green pepper, and garlic; cook for four minutes. Set the veggies aside.
  • Step 3
    Add ham hocks and chicken stock to Insta Pot. Set it for 60 minutes at high pressure to tenderize them. Release pressure when cooked.
  • Step 4
    Remove ham hock from pot and set aside to cool.
  • Ham hocks, peas and veggies.
    Step 5
    Add the vegetable mixture, peas, bay leaf, and thyme. Set for 15 minutes at high pressure.
  • Step 6
    While the peas are cooking, debone the meat from the ham hocks and set aside.
  • Hoppin
    Step 7
    Once the peas are cooked, add the meat from the hocks the chopped ham and the parsley; heat through.
  • Hoppin' John with finely sliced green onions.
    Step 8
    Taste before adjusting seasoning, as the ingredient can make it salty enough on their own. Garnish with green onions. Serve over hot, cooked rice with hot sauce.
