easy red beans and rice

This is a recipe I tried and loved! Its from a foodie named Mrs Potatohead...cute name, right! Its so easy to make and very flavorful. Goes great with some good bread to soak up the juices! This is not a thick gravy, so you may want to add cornstarch, if you like it that way. I added my photo.

Ingredients

  • 1 pound canned red beans
  • 5 cups water
  • 1 pound smoked pork shank-i used butt portion
  • 1 large onion-chopped
  • 1 - red bell pepper-chopped
  • 2 large cloves of garlic-chopped
  • 1 teaspoon liquid smoke flavoring
  • 1/4 cup butter
  • - salt & pepper to taste
  • - cooked rice

How To Make easy red beans and rice

  • Step 1
    In a large pot, saute onion, bell pepper, smoked pork, and garlic in a little olive oil, til onions are tender.
  • Step 2
    Add beans and water. Cook on low heat for about 1 1/2 hours.
  • Step 3
    Remove ham; allow to cool. Remove meat from bones and return meat to bean mixture. Add salt, pepper, liquid smoke and butter; heat through. If you want a thicker gravy, make a cornstarch and cold water slurry and add it to the pot. Stir til thickened.
  • Step 4
    Serve over cooked rice with bread for dunking!
