Easy Red Beans and Rice

Ingredients

1 lbcanned red beans
-
5 cwater
-
1 lbsmoked pork shank-i used butt portion

1 largeonion-chopped

1red bell pepper-chopped
-
2 largecloves of garlic-chopped
-
1 tspliquid smoke flavoring
-
1/4 cbutter
-
·salt & pepper to taste
-
·cooked rice
How to Make Easy Red Beans and Rice
- In a large pot, saute onion, bell pepper, smoked pork, and garlic in a little olive oil, til onions are tender.
- Add beans and water. Cook on low heat for about 1 1/2 hours.
- Remove ham; allow to cool. Remove meat from bones and return meat to bean mixture. Add salt, pepper, liquid smoke and butter; heat through. If you want a thicker gravy, make a cornstarch and cold water slurry and add it to the pot. Stir til thickened.
- Serve over cooked rice with bread for dunking!
