This is a quick alternative to the standard red beans and rice which takes all day - my family loves it and it hits all the flavor bells of the original! hope ya'll enjoy it too! it's even better the next day! double the recipe for a crowd!

Ingredients
- 2 cans - kidney beans (undrained)
- 1 can - rotel tomatoes
- 1 lb - smoked sausage (hillshire farms, bryan, etc..)
- 4 cups - cooked rice
How To Make easy red beans and rice

Step 1cut sausage into bite size pieces

Step 2add sausage, beans and rotel to a large saucepan or skillet - if you need more liquid, add a little water - cook for 30-45 minutes until sausage is cooked through -

Step 3cook rice according to package directions

Step 4mix sausage mixture and rice together - enjoy!
