italian pork sausage
1 c
carrots, sliced
1 large
baking potato, peeled and cut into 1/2 inch cubes
garlic clove, minced
2 can(s)
beef broth, 14 1/2 ounces
1 can(s)
garbanzo beans, canned, drained
1 jar(s)
chunky tomato pasta sauce
1 1/2 c
1/2 tsp
dried italian seasoning, crushed
bay leaf
1 c
zucchini, sliced very thin
parmesan cheese, grated

How to Make Easy Italian Sausage Vegetable Soup


  • 1In large skillet, crumble and brown sausage; drain.
  • 2In 3 1/2 to 4-quart slow cooker, combine cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.
  • 3Cover; cook on low setting for 7 to 9 hours.
  • 4Remove bay leaf.
  • 5Gently stir in zucchini.
  • 6Cover; cook an additional 30 minutes or until zucchini is tender.
  • 7To serve, ladle soup into bowls; sprinkle with cheese.
