Ingredients
- 1/2 pound italian pork sausage
- 1 cup carrots, sliced
- 1 large baking potato, peeled and cut into 1/2 inch cubes
- 1 - garlic clove, minced
- 2 cans beef broth, 14 1/2 ounces
- 1 can garbanzo beans, canned, drained
- 1 jar chunky tomato pasta sauce
- 1 1/2 cups water
- 1/2 teaspoon dried italian seasoning, crushed
- 1 - bay leaf
- 1 cup zucchini, sliced very thin
- - parmesan cheese, grated

Step 1In large skillet, crumble and brown sausage; drain.

Step 2In 3 1/2 to 4-quart slow cooker, combine cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.

Step 3Cover; cook on low setting for 7 to 9 hours.

Step 4Remove bay leaf.

Step 5Gently stir in zucchini.

Step 6Cover; cook an additional 30 minutes or until zucchini is tender.

Step 7To serve, ladle soup into bowls; sprinkle with cheese.
