Ingredients

  • 1/2 pound italian pork sausage
  • 1 cup carrots, sliced
  • 1 large baking potato, peeled and cut into 1/2 inch cubes
  • 1 - garlic clove, minced
  • 2 cans beef broth, 14 1/2 ounces
  • 1 can garbanzo beans, canned, drained
  • 1 jar chunky tomato pasta sauce
  • 1 1/2 cups water
  • 1/2 teaspoon dried italian seasoning, crushed
  • 1 - bay leaf
  • 1 cup zucchini, sliced very thin
  • - parmesan cheese, grated

How To Make easy italian sausage vegetable soup

  • Step 1
    In large skillet, crumble and brown sausage; drain.
  • Step 2
    In 3 1/2 to 4-quart slow cooker, combine cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.
  • Step 3
    Cover; cook on low setting for 7 to 9 hours.
  • Step 4
    Remove bay leaf.
  • Step 5
    Gently stir in zucchini.
  • Step 6
    Cover; cook an additional 30 minutes or until zucchini is tender.
  • Step 7
    To serve, ladle soup into bowls; sprinkle with cheese.
