This is a recipe I have had for a while and tweaked it a bit to add some veggies. It is so cheesy and a great way to use leftover ham.

Ingredients

  • 2 Tbsp
    cooking oil
  • 1/2
    onion, chopped
  • 1/2
    bell pepper, chopped
  • 4 c
    cubed, cooked potatoes
  • 2 c
    cubed, cooked ham
  • 1/2 c
    mayonnaise
  • 2 c
    shredded cheese. i use an italian mix, preshredded. all mozzarella works well also.

How to Make Easy Ham and Potato

Step-by-Step

  1. A large non stick skillet works best.
    Cook the onions and bell pepper on medium-low heat in oil just until softened.
  2. Add the potatoes, ham and mayonnaise. Stir well until well heated.
  3. Stir in the cheese until melted.
    Serve and enjoy as main meal, lunch or a side!
