easy ham and potato

This is a recipe I have had for a while and tweaked it a bit to add some veggies. It is so cheesy and a great way to use leftover ham.

Ingredients

  • 2 tablespoons cooking oil
  • 1/2 - onion, chopped
  • 1/2 - bell pepper, chopped
  • 4 cups cubed, cooked potatoes
  • 2 cups cubed, cooked ham
  • 1/2 cup mayonnaise
  • 2 cups shredded cheese. i use an italian mix, preshredded. all mozzarella works well also.

How To Make easy ham and potato

  • Step 1
    A large non stick skillet works best. Cook the onions and bell pepper on medium-low heat in oil just until softened.
  • Step 2
    Add the potatoes, ham and mayonnaise. Stir well until well heated.
  • Step 3
    Stir in the cheese until melted. Serve and enjoy as main meal, lunch or a side!
