easy ham and potato
This is a recipe I have had for a while and tweaked it a bit to add some veggies. It is so cheesy and a great way to use leftover ham.

Ingredients
- 2 tablespoons cooking oil
- 1/2 - onion, chopped
- 1/2 - bell pepper, chopped
- 4 cups cubed, cooked potatoes
- 2 cups cubed, cooked ham
- 1/2 cup mayonnaise
- 2 cups shredded cheese. i use an italian mix, preshredded. all mozzarella works well also.
How To Make easy ham and potato

Step 1A large non stick skillet works best. Cook the onions and bell pepper on medium-low heat in oil just until softened.

Step 2Add the potatoes, ham and mayonnaise. Stir well until well heated.

Step 3Stir in the cheese until melted. Serve and enjoy as main meal, lunch or a side!
